This is a great recipe to have on hand when you have an abundance of tomatoes from your garden! This makes 6 quarts of Salsa. This batch required a bushel (64 cups) of tomatoes plus onions, peppers, and spices. I always modify the recipes by taste. I make one batch spicy and one batch mild. Here’s my recipe… Laura
16 cups tomatoes
5 cups bell peppers
4 cups onions
8 jalapeno peppers (mild) use seeds and peppers!
1/2 cup chopped cilantro
12 cloves crushed garlic
1/4 cup salt
2 1/2 cups vinegar
1/4 cup sugar
1 tsp alum
1/2 tsp cumin
2 – 15 oz cans tomato paste
2- 12 oz cans tomato sauce
Simmer ingredients in stock pot for 60 minutes
Put in pint jars – process in boiling water for 5-7 minutes to complete canning process
